Guide to Brewing Ripe Pu'er Tea:

  1. Teaware: Preferably use a Yixing teapot or a gaiwan.
  2. Tea Amount: Use 5-7 grams of tea for every 150-200 ml of water.
  3. Water Temperature: Use boiling water or slightly cooled to 90-95°C.
  4. Brewing Steps:
    • Pre-warm the teapot or gaiwan, rinse the tea leaves, and discard the rinse water.
    • Add hot water to the tea leaves; steep for 10-15 seconds for the first infusion, then gradually increase the steeping time for subsequent infusions.
    • Adjust infusion times and number of infusions according to taste.

The tea-making technique of Longjing

Every spring, tea farmers pick fresh leaves in four rounds, in accordance with the changing seasons. They must carefully and gently pluck the leaves and immediately place them in tea baskets. If the leaves stay in the hands for too long, the temperature of the hands will affect the color of the leaves and, even more importantly, the flavor of the tea.

After being plucked, the fresh leaves undergo about an hour of pan-frying. Typically, 500 grams of fresh leaves will produce 100-150 grams of dried tea leaves.
